It was Easter dinner with a twist.
Unfortunately I couldn't go home for the holiday, but the good news is that I was still able to celebrate with family (ie: Vanessa)!
We whipped up a delicious meal with chicken, asparagus, and of course... cupcakes!
It was simply divine.
Fingerling potatoes by Vanessa:
-slice potatoes in half length wise
-bring pot of water to boil
-add a dash of salt
-simmer for approx. 15 min. or until tender
-drain potatoes
-toss with sparkling California champagne vinegar (or flavored
vinegar of your choice) and pesto
-serve and enjoy!
