I made the most delicious salmon dinner last night.

It's a dish I've been trying to master since my new year's resolution to cook more. (see: banana bread sunday, chicken florentine)
However, my cooking attempts have all been supervised by friends.
This time I decided to give it a go myself.

It was simply divine.
Here's the recipe. Let me know how yours turns out!
Baked Alaskan Pink Salmon with Garlic and Dill Aioli
Serves 4
2 pounds Pink Salmon fillet, boneless cut into 4 equal portions.
Baste Ingredients:
3/4 cup Mayonnaise
2 Tablespoons Garlic, freshly grated
1 Tablespoon Lime juice, fresh
1 Tablespoon Lime zest, fresh
1 Tablespoon Dill weed, fresh
1 teaspoon Tabasco sauce
4 small Dill sprigs for garnish. Salt and fresh ground black pepper to taste.
Directions:
1. Combine all of the baste ingredients.
2. Thoroughly coast both sides of each fillet portion with baste.
3. Bake in oven: 400 degrees for 15 to 18 minutes.
Serve with steamed asparagus, pasta with browned butter and fresh parsley.
Enjoy!
